Salmon

Chinese Style Salmon

Makes 4 servings.

Ingredients

  • 30 ml (2 tbsp.) hoisin sauce
  • 30 ml (2 tbsp.) rice vinegar
  • 5 ml (1 tsp.) brown sugar
  • 2.5 ml (½ tsp.) fresh ginger, minced
  • 2.5 ml (½ tsp.) cornstarch
  • 0.5 ml (1/8 tsp.) red pepper flakes, crushed

 

 

  • 60 ml (¼ cup) water
  • 1 Kg (2 lb.) bok choy
  • 15 ml (1 tbsp.) vegetable oil
  • 1 garlic clove, minced
  • 6 scallions, cut in 1 inch strips
  • 500g (1 lb.) skinless salmon fillet

Preparation

  1. Preheat oven at 350 °.
  2. Mix hoisin sauce, vinegar, sugar, ginger, cornstarch, red pepper and 30 ml (2 tbsp.) water.
  3. Cut bok choy leaves in 1 inch strips. Wash and drain. Discard bruised leaves.
  4. Broil salmon about 4 inches below the heat element in the oven, for 6 to 8 minutes. Then cut salmon in 1inch thick slices (optional).
  5. Warm oil in a skillet on medium high heat. Add bok choy, water and garlic; stir-fry for 2 minutes. Add scallions and cook 2 more minutes. Add hoisin mixture, cook 2 minutes longer; then stir in salmon and serve (Optional: Whole salmon fillet may be served over bok choy).
