Peppers and White Bean Dip

Using Roasted Peppers

Makes 8 servings

Ingredients

  • 5 ml (1 tsp.) olive oil
  • 250 m1 (1 cup) onion, chopped
  • 3 garlic cloves, chopped
  • 30 ml (2 tbsp.) fresh basil, chopped
  • 30 ml (2 tbsp.) red wine vinegar
  • 1 can (15 ounce) white beans, drained
  • 1 jar (7.25 ounce) roasted peppers or 3 freshly roasted peppers

Preparation

  • Sauté onion & garlic in oil over medium heat.
  • Combine onion mixture, basil, vinegar & beans in a food processor. Stir in peppers & blend until smooth.

Serve with toasted bagels, pita bread or baguettes as an appetizer or as a sandwich filling with grated carrots & mixed salad greens.
