Cheddar

Cheddar cheese is the most popular cheese around the world. It originates from England but is now made in many different countries. Canadian cheddar is actually world famous. In fact in 1986 a Canadian cheddar made by Ault Foods Ltd. was declared the World's finest cheese.

The name cheddar comes from the process of turning and piling the curd to express whey and develop the desired texture.

The longer cheddar is allowed to mature the sharper and tangier the bite it develops. Mild cheddar has been aged for 3 months; medium cheddar for 4-9 months and sharp cheddar has been aged for 9 months or more. This cheese is really one of the most versatile; it can be served at any occasion.

Have you ever wondered what the difference is between orange and yellow cheddar. Well that's just it: the color! Nothing more, nothing less! (An extract from Annatto seed is added to orange cheddar to give it its color)


A good alternative to mild Cheddar in your recipes could be a Brick or a Colby cheese. A Gruyere could replace a medium Cheddar. A sharp Cacciocavallo, a Miranda or a sharp Provolone makes a perfect replacement for a strong cheddar.

Wine and Cheese tip!

For a wine and cheese, choose a medium or strong Cheddar to accompany a port or a full-bodied red wine. To fully appreciate its wonderfully unique flavor, body and texture, leave it at room temperature for at least 30 to 45 minutes before tasting it.

Storage

Cheddar cheese should be refrigerated between 1-3 C. It can be stored in its original wrapping, plastic wrap, aluminum foil, a sealable plastic bag or a plastic container. Make sure your cheese is carefully covered to prevent drying out. The shelf life of cheddar cheese is about 7 to 14 days.
