Cranberry, Tangerine and Crystalized Ginger Relish

Ingredients

  • 1 - 12 ounce bag cranberries
  • 1 - 6 ounce tangerine,unpeeled, halved, seeded, cut into 1-inch pieces
  • 125 ml (1/2cup) crystallized ginger, coarsely chopped
  • 185ml (3/4cup) sugar or sweetener (read instructions for ratio substitutions)
  • 60ml (¼ cup) orange marmalade

Preparation

  • Using the on/off turns, coarsely chop cranberries in a processor. Transfer to medium bowl.
  • Using the on/off turns, coarsely chop tangerines in a processor. Combine with cranberries.
  • Mix in remaining ingredients: sugar or sweetener, crystallized ginger, orange marmalade
  • Cover and refrigerate overnight. Can be made one week ahead. Serve cold or at room temperature.
  • Makes approx. 3 cups

The Berry Shake

Makes 2 servings

Combine the following ingredients into a blender and pour into glass and serve. 250ml (1 cup) berries, variety, frozen or fresh 250ml (1cup) vanilla yoghurt, plain or frozen 15ml (1tbsp.) whipped cream or sugar or sweetener 125ml (1/2 cup) milk 15ml (1tbsp.) flax seed (optional)
